Directions:
1. Bring a large pot of salted water to a boil. Cook tagliatelle according to package directions until al dente. Drain and set aside.
2. In a large skillet or saucepan, heat olive oil over medium heat. Add onions, carrots, and bell pepper, and sauté for 5 minutes until softened.
3. Stir in the garlic and cook for 1 minute until fragrant.
4. Add the ground beef and cook until browned, breaking it up with a spoon. Drain any excess fat if necessary.
5. Stir in the tomato paste, crushed tomatoes, oregano, basil, paprika, salt, and pepper. Lower the heat and let simmer for 20 minutes, stirring occasionally, until the sauce thickens.
6. Toss the cooked tagliatelle with the ragu sauce until well coated.
7. Sprinkle with fresh parsley and Parmesan cheese before serving.
