Strawberry Shortcake Cheesecake Rolls

Ingredients:
1 box strawberry cake mix
3 large eggs
1/3 cup vegetable oil
8 oz cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 cup whipped topping
Fresh strawberries, sliced for garnish

Instructions:
Preheat and prep the pan
Preheat your oven to the temperature specified on the cake mix box.
Line a jelly roll pan (about 10×15 inches) with parchment paper and lightly grease it.
Prep Time: 10 minutes
Mix the batter
In a large bowl, combine strawberry cake mix, eggs, and oil.
Stir until smooth and well blended.
Mixing Time: 5 minutes
Bake the cake
Pour the batter into the prepared pan, spreading evenly.
Bake for 15–20 minutes or until a toothpick comes out clean.
Baking Time: 15–20 minutes
Roll it up
Let the cake cool for 5 minutes after baking.
While still slightly warm, gently roll the cake (with parchment paper) from the short end into a log shape.
Allow to cool completely.
Cooling & Rolling Time: 30 minutes
Prepare the filling
In a separate bowl, mix softened cream cheese, powdered sugar, and vanilla until smooth.
Fold in the whipped topping until light and fluffy.
Filling Prep Time: 5 minutes
Assemble the roll
Carefully unroll the cooled cake and spread the filling evenly.
Roll it back up gently without the parchment paper.
Wrap in plastic wrap and refrigerate for at least 1 hour.
Chill Time: 1 hour
Serve and garnish
Slice into beautiful spirals and top with fresh strawberries.
