Sourdough Pancakes

Instructions

1. In a large bowl, mix together the sourdough starter, flour, and milk until well combined. Cover loosely and let it rest for about 30 minutes to allow the batter to bubble slightly.
2. After resting, whisk in the sugar, egg, melted butter, salt, and vanilla extract (if using).
3. Just before cooking, sprinkle baking soda over the batter and stir gently. You’ll notice the batter becoming light and airy.
4. Heat a lightly greased skillet or griddle over medium heat. Once hot, pour about ¼ cup of batter for each pancake.
5. Cook until bubbles form on the surface and the edges look set, about 2–3 minutes. Flip and cook for another 1–2 minutes, until golden brown.
6. Transfer pancakes to a warm plate and continue with the remaining batter.
7. Serve warm with butter, maple syrup, fresh fruit, or a dusting of powdered sugar.
