Instructions
Prepare the Cake:
- Preheat and Prep: Heat oven to 350°F. Grease a 9-inch round cake pan and line with parchment paper.
- Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, and salt.
- Combine Wet Ingredients: In a large bowl, whisk sugar, Greek yogurt, oil, eggs, and vanilla until smooth.
- Make Batter: Gradually fold dry ingredients into wet ingredients until just combined. Don’t overmix.
- Bake: Pour batter into prepared pan. Bake 35-40 minutes until a toothpick comes out with a few moist crumbs.
- Cool: Let cool in pan 10 minutes, then turn out onto wire rack to cool completely.
Make the Frosting:
- Beat Cream Cheese: Using an electric mixer, beat cream cheese until smooth and fluffy, about 3 minutes.
- Add Remaining Ingredients: Beat in Greek yogurt, 1 cup powdered sugar, and vanilla. Add more powdered sugar if desired for sweetness and thickness.
- Whip: Beat until light and airy, about 2-3 minutes.
Assemble:
- Frost: Spread frosting evenly over completely cooled cake.
- Garnish: Top with fresh strawberries if desired.
