Savory Veggie Pancakes

Directions:

1. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and black pepper.
2. Add the milk and egg, whisking until smooth.
3. Fold in grated carrot, chopped peppers, green onions, and cheese if using.
4. Heat a non-stick skillet over medium heat and brush lightly with olive oil or butter.
5. Pour small ladlefuls of batter onto the skillet, cooking each pancake for 2–3 minutes per side until golden brown and cooked through.
6. Repeat with the remaining batter, adding more oil if needed.
7. Serve warm with sour cream, yogurt, or your favorite dipping sauce.
