Preheat Oven:
Preheat your oven to 375°F (190°C). -
Cook the Sausage Mixture:
In a large skillet, cook the sausage, onion, and green pepper over medium heat until the sausage is browned and crumbly. Drain any excess grease and let it cool slightly. -
Layer the Pie:
Sprinkle half of the shredded cheese into the bottom of the unbaked pie shell. Spoon the sausage mixture evenly over the cheese. Top with the remaining cheese. -
Mix the Egg Filling:
In a medium bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and oregano until well combined. -
Assemble:
Pour the egg mixture over the sausage and cheese in the pie shell. -
Bake:
Place the pie on a baking sheet and bake for 35–40 minutes, or until the center is set and the top is lightly golden. -
Cool & Serve:
Allow the pie to cool for 5–10 minutes before slicing. Serve warm.

Substitute Monterey Jack with pepper jack for a little heat.
