Lemon Bars Delight

Instructions

1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish or line with parchment paper.
2. In a large mixing bowl, cream together the softened butter and powdered sugar until smooth and creamy.
3. Add the flour and salt to the butter mixture and mix until a soft dough forms.
4. Press the dough evenly into the bottom of the prepared baking dish to form the crust.
5. Bake the crust for 18-20 minutes, or until lightly golden around the edges. Remove from oven and set aside.
6. In a separate bowl, whisk the eggs until well blended. Add the sugar, flour, lemon juice, and lemon zest, and whisk until fully combined.
7. Pour the lemon filling over the warm crust and return the dish to the oven.
8. Bake for 20-25 minutes, or until the filling is set and no longer jiggles in the center.
9. Allow the bars to cool completely in the pan. Once cooled, dust the top with powdered sugar.
10. Cut into squares or rectangles and serve chilled or at room temperature for a refreshing citrus treat.
