Instructions
1. Cook fettuccine pasta according to package directions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
2. In a medium bowl, toss the shrimp with Cajun seasoning until evenly coated.
3. Heat olive oil and butter in a large skillet over medium-high heat. Add shrimp and cook for 2–3 minutes on each side until pink and cooked through. Remove and set aside.
4. In the same skillet, add garlic, red bell pepper, and onion. Sauté for 3–4 minutes until softened and fragrant.
5. Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese, black pepper, salt, and Italian seasoning.
6. Continue stirring until the sauce thickens, about 5 minutes. If it becomes too thick, add a splash of reserved pasta water to loosen it.
7. Add the cooked pasta to the sauce and toss until well coated.
8. Return the shrimp to the skillet, stirring gently to combine everything evenly.
9. Sprinkle with chopped parsley and extra Parmesan before serving.
