Cowboy Casserole

Instructions

1. Prepare the Meat Mixture:

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

  2. In a large skillet over medium heat, add olive oil and cook the onion until soft, about 3 minutes.

  3. Add ground beef and cook until browned. Drain excess grease.

  4. Stir in garlic, cream of mushroom soup, sour cream, corn, 1 cup of cheddar cheese, paprika, salt, and pepper. Mix well until creamy and combined.

2. Assemble the Casserole:

  1. Spread the beef mixture evenly in the prepared baking dish.

  2. Arrange tater tots in a single layer over the top.

  3. Sprinkle the remaining 1 cup of cheddar cheese on top of the tater tots.

3. Bake:

  1. Bake uncovered for 35–40 minutes, or until the tater tots are golden and crispy, and the casserole is bubbling around the edges.

  2. Let cool for a few minutes before serving.

Optional Add-Ins

  • Black beans for added protein and texture

Storage:

  • Store leftovers covered in the refrigerator for up to 4 days.
