Cheesy Zucchini Bites

Directions:

1. Slice zucchini into even rounds and pat them dry with a paper towel.
2. Place a small amount of shredded cheese between two zucchini slices to form little sandwiches.
3. In one bowl, beat the eggs. In another, mix flour, breadcrumbs, garlic powder, paprika, salt, and pepper.
4. Dip each zucchini sandwich into flour, then egg, and finally coat with the breadcrumb mixture.
5. Heat olive oil in a skillet over medium heat. Fry zucchini bites for 2–3 minutes on each side, until golden brown and the cheese has melted.
6. Remove and place on a paper towel-lined plate to drain excess oil.
7. Serve hot with marinara sauce, garlic dip, or ranch for dipping.
