1. Cook the Beef Filling:
In a skillet over medium heat, cook the ground beef and onion until browned. Drain excess grease.
Add garlic powder, salt, pepper, and Worcestershire sauce. Stir in the shredded cheddar cheese until melted and creamy. Set aside to cool slightly.
2. Prepare the Biscuit Dough:
In a large bowl, whisk together flour, baking powder, baking soda, and salt.
Cut in the butter using a pastry cutter or fork until crumbly.
Add buttermilk and stir until a soft dough forms. Do not overmix.
3. Shape and Fill:
Roll the dough out on a floured surface to about ½-inch thick.
Cut out rounds using a biscuit cutter or cup.
Place a spoonful of the beef mixture in the center of half the rounds, then top with another biscuit round.
Seal the edges gently with your fingers or a fork.
4. Bake:
Preheat oven to 400°F (200°C).
Place the biscuit bombs on a parchment-lined baking sheet. Brush tops with melted butter and sprinkle with shredded cheese.
Bake for 15–20 minutes, or until golden brown and cheesy on top.
5. Serve:
Serve warm with a side of gravy, ketchup, or a creamy dipping sauce.
