  • 2 tablespoons lime juice
  • 1/4 cup red onion, finely diced
  • 2 tablespoons fresh cilantro, chopped
  • 1/2 jalapeño, minced (optional)
  • Salt and pepper to taste

For Assembly:

  • 4 large flour tortillas (12-inch burrito size)
  • 1 1/2 cups Mexican rice or cilantro lime rice
  • 1 1/2 cups refried beans or black beans
  • 2 cups shredded cheese (cheddar, Monterey Jack, or Mexican blend)
