Brazilian Chocolate Cake (Bolo de Brigadeiro)

Instructions

1. Make the Cake:

  1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking pan.

  2. In a large mixing bowl, whisk together flour, sugar, cocoa, baking powder, baking soda, and salt.

  3. Add eggs, milk, oil, and vanilla. Mix until smooth.

  4. Gradually stir in hot water (or coffee) until the batter is well combined — it will be thin, that’s okay!

  5. Pour the batter into the prepared pan and bake for 35–40 minutes, or until a toothpick comes out clean.

  6. Allow the cake to cool completely before frosting.

2. Prepare the Brigadeiro Frosting:

  1. In a saucepan, combine condensed milk, cocoa powder, and butter over medium heat.

  2. Stir constantly until thickened (about 10 minutes).

  3. Remove from heat and stir in heavy cream and vanilla for a silky, pourable consistency.

3. Assemble the Cake:

  1. Poke small holes across the surface of the cooled cake using a fork or skewer.

  2. Pour the warm brigadeiro frosting evenly over the cake, letting it soak slightly into the holes.

  3. Generously sprinkle chocolate sprinkles on top.

  4. Let the frosting set for at least 30 minutes before serving.

Tips & Variations

  • For extra indulgence, add a layer of brigadeiro filling between two cake layers.

  • Serve slightly warm for a gooey texture or chilled for a firmer, fudgy slice.
