Barbecue Skewers

Ingredients:
1½ lbs boneless chicken thighs or beef, cut into 1-inch pieces
1 red bell pepper, chopped into chunks
1 green bell pepper, chopped into chunks
1 red onion, cut into wedges
2 tablespoons olive oil
2 tablespoons soy sauce
2 tablespoons barbecue sauce
1 tablespoon lemon juice
1 teaspoon garlic powder
1 teaspoon smoked paprika
½ teaspoon cumin
Salt and black pepper, to taste
Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions:
Marinate the Meat:
In a large bowl, combine olive oil, soy sauce, barbecue sauce, lemon juice, garlic powder, paprika, cumin, salt, and pepper. Add the meat pieces and mix until coated. Cover and marinate for at least 1 hour, or overnight for best flavor.
Marinating Time: 1 hour – overnight
Assemble the Skewers:
Thread the marinated meat, bell peppers, and onion onto skewers, alternating for color and flavor.
Assembly Time: 10 minutes
Grill the Skewers:
Preheat a grill or grill pan over medium-high heat. Cook skewers for 10–12 minutes, turning occasionally, until meat is fully cooked and veggies are slightly charred.
Grilling Time: 12 minutes
Serve and Enjoy:
Let the skewers rest for a few minutes before serving. Great with rice, salad, or warm flatbreads.
