Ingredients

  • 2 rolled-out rounds of [pie dough]
  • 2 pounds Granny Smith applespeeled, cored and cut into slices 1/4 inch thick
  • 2 pounds Pink Lady applespeeled, cored and cut into slices 1/4 inch thick
  • 1/2 cup firmly packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly grated nutmeg
  • 4 teaspoons cornstarch
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons cold unsalted buttercut into 1/2-inch pieces
  • 1 eggbeaten with 1 tablespoon milk
  • 2 teaspoons granulated sugar
